So much to be thankful for

A very late Thanksgiving post…

For the second year, our dear friend Kate-Robin joined us for Thanksgiving. And this year she brought her girlfriend Jen. It was a blast!

Kate-Robin cooked the most delicious Butternut Squash and Hazelnut Lasagne as our vegetarian Thanksgiving main dish. We also baked this Spiced Pumpkin Bread, which has been our favorite holiday treat (and gift to friends!) this year. We highly recommend both recipes. Super yummy.

And what Thanksgiving in Wine Country isn’t complete without a trip to Chateau St. Jean?! (Wow, do we love that winery!)

Vanilla Coconut Milk Ice Cream Recipe

Tired of spending $6 a pint on the most delicious vegan ice cream on the planet, Coconut Bliss? We certainly were, so David bought me an ice cream maker for our anniversary and I’ve developed a vegan coconut milk ice cream recipe that could rival the professionals.

This isn’t just for vegans, this recipe is for everyone. Coconut milk is extremely creamy and delicious, even if it is not exactly figure friendly. (At least it’s good for you coconut milk fat! Perfect for breastfeeding mothers!) You’d never know there wasn’t any dairy involved.

Here’s our recipe:

Mix together:

28 fl oz (2 cans) original coconut milk (none of the low fat mumbo jumbo)

1/2 cup raw agave nectar (perhaps a little less… please let me know what you think!)

2 tablespoons vanilla extract and/or as much of a vanilla bean as you can afford (I typically use 1/3 of a bean)

Pop it in your ice cream maker for 25 minutes, then chill in the freezer.

Remove from the freezer and allow it to soften for about 10 minutes before serving.

Yield: approximately 1 quart

Healthy Living: Hidden MSG

I wrote this before Miss Leyba was born and never got to post it. Since the New York times recently scooped my story, I figure I had better get it up here…

It’s now common knowledge that MSG (monosodium glutamate) is bad for us, yet it remains a common additive in processed foods.

Reactions to MSG vary from person to person, but the most common reactions include headaches, insomnia, skin rashes, depression, bags under the eyes and more. The more extreme reasons include seizures, reproductive disorders, etc. Sounds crappy, right?

Well, MSG is everywhere. The FDA does not require manufacturers to list MSG as an ingredient if it’s blended with a mixture of spices or food additives. (While technically MSG is only one of several forms of free glutamate used in foods, consumers frequently use the term MSG to mean all free glutamate. For this reason, FDA considers foods whose labels say “No MSG” or “No Added MSG” to be misleading if the food contains ingredients that are sources of free glutamates, such as hydrolyzed protein.) So you may be frequently ingesting MSG without realizing it. In fact, MSG is found in nearly every boxed, canned, or bagged food unless it is found at a health food store… and even at Whole Foods we have to read all the labels!

Here are some of its other hidden names:

The following compounds always include MSG: hydrolyzed protein (of any kind), textured protein, sodium or calcium caseinate, autolyzed yeast, or gelatin.

The following frequently contains MSG: yeast extract, malt extract, natural flavors/flavoring, malt flavoring, barley malt, bouillon, natural pork, beef or chicken flavoring, stock, broth, seasonings, carrageenan, maltodextrin, soy sauce and extract, whey protein/isolate/concentrate, soy protein/isolate/concentrate, pectin, anything protein fortified or enzyme modified.

It’s also commonly used as a preservative in vaccines (yet another reason not to get the flu shot!).

The only way to completely avoid MSG is to buy items without the above ingredients!

Here are several companies that produce healthy and safe alternatives to typical MSG-laced foods: Turtle Island Foods (tofurky franks and burgers), Health is Wealth (spinach, veggie and mexican munchees, vegetarian spring rolls, and pizza bagels are definitely MSG-free; website is vague about some of their other products).

More goodies


This week I made my first excursion to Whole Foods in over a month. Never mind what for (fruit sweetened, locally made, gluten-free cookies), I splurged ($3.50) and bought the last issue of Blueprint magazine. I thought perhaps they would go out with a bang, but eh not so much. In fact, they don’t mention that it’s folding (or did I miss it?) and they still had those magazine subscription postcards: a great deal, $6 for a years worth of issues… Except that, well, there will never be another issue. (You’d think they would have at least pulled those cards!) Anyhow, I’ve found that even the best issue of Blueprint pales in comparison to Domino. So, good riddance. Goodbye, Blueprint!

During our prenatal appointment on Monday, our midwife casually mentioned again how big the baby is (“Feel those long legs!”) and went through a check-list of things we’ll need once the baby is here… just the essentials: diapers, outfits (no newborn sized clothes for our baby — definitely starting off in the 0-3 month size!), and baby socks. “The baby will need socks. To be cozy and comfy.” SOCKS?! We hadn’t bought any. Whoops! I quickly ordered some organic ones online. They were on sale. They arrived today. Now we’re really ready. Phew!

David and I received Border’s gift cards for Christmas and instead of buying books for the baby (so tempting!), we decided to treat ourselves one last time before the little one gets here. My gift: Super Natural Cooking: Five Ways To Incorporate Whole and Natural Ingredients into Your Cooking by the ever awesome Heidi Swanson. I’ve written about how much I love Heidi before… I adore her photography, love her 101 Cookbooks site, was completely obsessed with her previous cookbook (even gave it as gifts to friends), and couldn’t wait for this new cookbook to come out. I waited to buy it so that I could get a signed copy on her book tour. That I was so excited for. That I emailed her about. That I then missed. (Still sad about it!) So, while this copy isn’t signed, it still feels like the ultimate gift, which I’ve waited over a year for. The pictures are gorgeous, it’s exactly our type of cooking, and I am pumped to get in the kitchen. Now, if I could only find the energy…

Stop, grab the camera, and shoot

I find it hard to remember to take out my camera and take casual snapshots. I think part of the reason why is that my beautiful camera is so cumbersome, but I also find it hard to take nice portraits inside with artificial light. I much prefer taking outdoor shots with this particular camera. Is it the camera body, the lens, the settings I use? I’m not really sure.

I just know right now I’m finding it hard to 1) get motivated to take pictures and 2) remember to stop, grab the camera, and shoot.

Some recent events at our house that I did not take pictures of (and, of course, wish I had):
+ Poker night tournament (with two types of quiche and banana bread)
+ Harry Potter and the Order of the Phoenix DVD release party (popcorn and hot apple cider)
+ After work dinner party (enchilada casserole and ice cream sundaes)

While I hope to take beautiful “posed” photos of the baby when s/he arrives, I am worried about missing all those wonderful spontaneous moments that I’d love to capture because they make for great memories. I think we need a camera that takes superior pictures, but is compact enough to fit in the diaper backpack. (At the same time, we’ve been talking about getting a digital video camera… We’ll see which purchase happens first or if we can roll the two together. I’m really hesitant to spend any extra money right now… thought I am tempted by Flip Video.)

What are your thoughts on my camera conundrum?

Tonight my friend Natalia is coming to visit. I hope I do better and get at least one shot of us together.
